What to expect from Madrid Fusion Manila 2016

The 2nd edition of the Manila leg of the Madrid based international gastronomy congress will highlight the convergence of eastern and western cuisines under the theme The Manila Galleon: East Meets West

EAST MEETS WEST. There can be a dialogue between cuisines from Asia and from Europe and the Americas. These dishes by chefs JP Anglo and Edward Bugia are, for example, Filipino takes on the Spanish paella. Anglo's adobong pusit arroz caldo (left) is his take on the paella negra, while the pansit paella is Bugia's take on the Spanish fideos, a paella-like pasta dish, using pansit noodles.
